My Great grandfather George Faulkner 1850-1895 lived and died in Londonderry . On his son marriage certificate it says that he was a merchant seaman. Could someone please point me in the right direction where I could find any information on him.

I can't add anything to Martin's answer about tracing the career of a merchant seaman. Unless you can identify one ship that he served on, it's a lost cause.
However, a George Faulkner of 43 Bridge Street, Londonderry died in Liverpool on 23rd March 1895. FreeBMD shows him to be aged 45. He was a seaman, and I'm wondering whether he was your man after all?

If this is your man, then it is possible that the death certificate might name his last ship, or the grant of probate might give you some further clues.

If it were me I would obtain the death certificate, and write to PRONI about the will.

Thanks for replying. This is my george Faulkner. I have viewed the wills on Proni there is 2 will 1 saying that he died in Londonderry and the other saying that he died in Liverpool, I thought the Liverpool one was a mistake. Where do I go to view and buy his death certificate.
